Ingredients:
1 cup of white rice (short grain)
2 cups of water
2 teaspoons of rice winegar
1 teaspoon of sugar
1 teaspoon of salt
4 Nori sheets (black alage sliced in sheets)
Wasabi as much as one likes (optional)
1 small peeled cucumber
4.5 ozs of smoked salmon, trout or fresh sashimi tuna
½ small avocado (optional)
3 spoons of marinated ginger
Soy sauce as accompaniment
What you have to do... first of all, prepare the rice!
1- Rinse the rice in cold water until the water becomes transparent; then dry it well.
Put the rice and water in a medium-sized saucepan, bring it to a boil then lower the heat, but keep it cooking uncovered for 4-5 minutes. Remove the saucepan from the gas and let it cool for about 10 minutes.
2- Add a compound of rice vinegar, sugar and salt to the rice, then mix with a wooden spoon until the rice is cool.
3- Place a sheet of Nori over a sheet of waxed paper or bamboo. Keep them on one horizontal surface. With your hand, flatten a fourth of rice along the nori sheet. Leave about 0.5 inches on three sides.
Spread a small quantity of wasabi on the center of the rice if you wish.
Cut the fish in small slices, cut the cucumber and the avocado in small slices, about 2 inches in length.
Lean a quart of fish slices, the cucumber, avocado and ginger over the rice.
4- Help yourself with the bamboo or waxed paper and roll up the nori very tightly; start from the bottom and make sure that all the ingredients are in the middle of the roll. To seal the small cilinder, just press on the nori borders.
5- Using a sharpen knife, cut the cilinder in 1 inch slices.
Repeat these 5 steps with all the ingredients. Serve Maki in small dishes, with a small bowl of soy sauce and wasabi.

Note: You can prepare maki 4 hours before serving, keep them covered in fridge.
Cut the Maki roll in slice just before serving. Sashimi tuna can be found at fishmonger's shop.
