How to make it?
1- Let's start with the cucumber. Cut it in a half and gently scoop the inside with a teaspoon to eliminate the seeds, as in the picture below.

Now peel it and cut it into thin slices, sprinkle with salt and let it rest for 5 minutes. Now rinse it well to eliminate the excess of salt and dry it with a paper towel.

2- Cook the shrimp in slightly salty boiling water for 2 minutes. Strain them and put them into cold water.
Let them cool down and then peel them, eliminate the vein, but leave the tail intact.

3- In a big bowl put the vinegar, sugar, soy sauce and ginger and mix the ingredients untill the sugar dissolves completely. Now add the shrimp and cucumber to the sauce and let it all marinate for 1 hour.
4- We're nearly there! You just have to put your sunomomo on the plates, sprikle it with the toasted sesame seeds and serve it! ^__^
NB: This kind of dish, with raw, marinated or sautéed food, served with vinegar sauce, makes a delicious starter!
(*) You can toast the sesame seeds by yourself! Take a little nonstick fry-pan, make sure it is dry and put the sesame seeds inside of it. Then let them toast at low heat untill they start to pop!
