How to prepare them!
1- Put the sesame seeds in a pan and toast them by themselves on low heat for 1-2 minutes, shaking them continuously untill the seeds start to crackle.

2- In a small bowl mix the salmon with the green onions and the ginger.

3- Cook the rice as in: How to cook Gohan. Then wet your hands and form a ball with 1/3 of cup of rice. (You could also use a measuring spoon, as in the picture, if you find it easier)

4- Then open your ball and put inside of it 2 tea spoons of the salmon stuffing. Close it and try to give it a spherical shape, with the rice completely covering the stuffing. Repeat the operation with the remaining rice and stuffing. Remember always to keep your hands wet otherwise the rice will stick to them.

5- Put your rice balls on a plate and sprinkle the toasted sesame seeds on them. If you managed to do everything right, your rice balls should look like the ones in the picture!

If the smoked salmon you're using isn't particularly salty, you may want to add a little salt or shoyu (soy sauce) to the stuffing. Also, try adding sichuan pepper if you like things a little spicy!
