Dorayaki

Hi! Today I'd like to teach you how to make the Japanese sweet preferred by Doraemon! I'm talking about Dorayaki! Do you know it? Well then, let's start with the list of the ingredients we need to prepare this delicious treat!

   Dorayaki  

Pecks:

  • 1 cup of flour = 6,35 ozs.
  • 1 cup of water = 6pints.

INGREDIENTS FOR THE CREAM:

  • 1 cup of azuki (japanese red beans, you can find them in the best supermarkets or specialised shops)
  • 8 cup of water
  • 1/3 of cup of sugar

How to prepare...?

Pour 4 cups of water into a pot and add the azuki. Keep the flame high until water boils, then turn off the fire and remove the water (you can use a colander!)
Now put the azuki in the pot and the other 4 cups of water and make boil on low flame for an hour (more or less), until our azuki softens and starts to melt.
Add the sugar and mix well for a few minutes, breaking the beans, until all thicken.
At the end you should have a sort of chestnut marmelade, very dense and tasty!

Now put our cream in a bowl and let it cool down. Meanwhile let's make the fritters.

 

INGREDIENTS FOR THE FRITTERS: (*)

  • 3 eggs
  • 1 cup of flour
  • 2/3 of cup of sugar
  • 3 spoons of water
  • 1/2 teaspoon of baking powder (to blend into the water)
  • Oil to grease the pan (the smallest you have, the fritters should come out with a diameter of 4 inch more or less)

How to prepare?

Whisk the eggs well then slowly add the flour, trying to make as few lumps as possible. Next add the rest of the ingredients.
Heat the pan (better if it is a nonstick one), grease it a little and make the fritters with 2 spoons of the mix for each side. Cook on one side until little bubbles appears, it may seem sci-fi but it happens really! Then turn them for less than a minute. If they are not well cooked, you'll notice it.
They should come out approx. 1/5 inch, use the dimension of the pan as a guide for how much flour to use for each fritter.

Once all the fritters are prepared and cooled down, spread the anko (the azuki jam) on a fritter, then take another and close them like a sandwich! Repeat for each fritter and...

YUM YUM!!! Itadakimaaaaaaaaasu!!!!

 

 

(*) Note on the ingredients: you can add or remove sugar and eggs to make the fritters lighter or sweeter, as you wish. It may be useful to compensate the sweetness of the jam. Make some to try and see the results.
